aubergine & apple pasta

I am not a great cook. I can bake, but cooking at our home is reserved for my husband. he loves it, I love it, we're great. but sometimes I like to experiment and with baking it's not such a great idea to do so.

this is how this pasta came into being - I wanted something with touch of Greek style, something light and with fruit. it's incredibly easy to make and tastes like a salad with pasta. I couldn't control myself and ate it with spoon, a total faux pas, I know, but mhh, you have to try it that way :)

have a great weekend :)

it was supposed to be morning post, but we got caught in our Sat routine and friends. hope you had good start of the weekend, mine morning was terrible (sleepless night, babies stuff ;) ) so I bake blueberries cake, sent my boys for a walk and drank perfect caramel latte with still hot cake. it did cheer me up a bit ;)

plums & the easiest cake in the world

Who doesn't love plums? There are juicy, sweet and healthy! Also now is the time you can buy them fresh.
Plums are one of my favourite fruits for baking (1st place is of course for strawberries and blueberries), mainly because I know how they react with each kind of cake. Yesterday I did one of the best & easiest cake you can make with plums. It only take 8 min to make it and about an hour in the oven, so - no excuses! :)

What do you need?


130g flour 
80g sugar
1,5 teaspoon baking powder
100g butter
1p vanilla sugar
2 egs
500g plums
1-2 tablespoons sunflower oil (optional)
plus butter/sunflower oil to coat the pan

How is it made?


  1. Preheat oven - 200 C, prepare the pan - coat it with butter or sunflower oil.
  2. Put in the bowl sugar, vanilla sugar and butter (you can melt it before), blend it for about 1-2 minutes.
  3. Add eggs, blend it good with each one.
  4. Add combine flour and baking powder, beat until smooth dough. Add oil if the dough is too sticky, I like to add it anyway, makes the cake more fluffy.
  5. Pour into the prepared pan. Place plums on top cut side up pushing down slightly into the dough.
  6. Bake for one hour, when done (check it with the small stick) let the cake cool in the pan.
  7. You can sprinkle with confectioners' sugar.
